Nail the quinoa

Quinoa is your friend: delicious, nutritious, versatile. But it can be tricky to get right. I think Gwynnie has it nailed: here is her method. It’s never failed me. Yet.

Makes 3 cups


1 cup quinoa

1 3/4 cup water



Rinse the quinoa in a fine sieve – really important!

Put it in a saucepan over high heat with the water and a pinch of salt. Bring it to the boil, then lower heat and cover. Cook until all the liquid is absorbed and the quinoa looks like lots of little spirals, about 12-15 mins.

Turn the heat off and place a dry paper towel between the pot and the lid, and let it sit for at least 5 minutes before giving it a fluff with a fork.
